Quick and easy no-bake energy bites with a rich cosmic brownie flavor, perfect for lunchbox treats or snacks. These chewy, chocolatey bites are packed with wholesome ingredients and colorful sprinkles for a fun twist.

  • 1/2 cup peanut butter (125g), natural with no added sugar
  • 1/4 cup honey (85g) or maple syrup for vegan option
  • 3 tablespoons unsweetened cocoa powder (15g), preferably Dutch-processed
  • 1 teaspoon vanilla extract (5ml)
  • 1/3 cup mini chocolate chips (60g), optional
  • 1/4 cup rainbow sprinkles (35g)
  • Pinch of salt

Instructions

  1. Measure out all ingredients: rolled oats, peanut butter, honey, cocoa powder, vanilla extract, mini chocolate chips, rainbow sprinkles, and salt.
  2. In a medium mixing bowl, combine rolled oats, cocoa powder, mini chocolate chips, and salt. Stir until evenly distributed.
  3. Add peanut butter and drizzle honey over the dry mixture. Add vanilla extract last. Mix thoroughly with a spatula or wooden spoon until sticky but firm. Add more honey or peanut butter if too dry.
  4. Optional: Chill the mixture in the refrigerator for 10-15 minutes if too soft or sticky to handle.
  5. Scoop about 1 tablespoon (15g) of mixture and roll into balls. Repeat until all mixture is used (makes about 15-18 bites).
  6. Pour rainbow sprinkles onto a shallow plate and roll each ball gently in sprinkles, pressing lightly to coat evenly.
  7. Place coated bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  8. Store bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.

Notes

Use old-fashioned rolled oats for best chewy texture. Chill mixture before rolling to prevent stickiness. Use a cookie scoop for uniform bites. Store in single layers separated by parchment paper to avoid sticking. Peanut butter can be swapped with almond or sunflower seed butter for allergies.
