These easy, moist chocolate chip zucchini muffins come together in one bowl and are perfect for beginners. The zucchini adds subtle moisture and texture, making these muffins a delicious treat for breakfast or snack.

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Β½ teaspoon salt
  • 1 teaspoon cinnamon
  • ΒΎ cup (150g) granulated sugar
  • β…“ cup (80ml) vegetable oil (can substitute melted coconut oil)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 Β½ cups finely grated zucchini (about 1 medium zucchini)
  • 1 cup (170g) mini chocolate chips

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Line a 12-cup muffin tin with liners or grease it lightly.
  2. Grate the zucchini using the fine holes of a box grater. Press out some excess moisture with a clean kitchen towel or paper towels.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Add sugar, vegetable oil, eggs, and vanilla extract to the dry ingredients. Stir gently with a spatula or wooden spoon until just combined; the batter will be slightly lumpy.
  5. Fold in the grated zucchini carefully to maintain moisture balance.
  6. Gently fold in the mini chocolate chips, reserving a few to sprinkle on top if desired.
  7. Divide the batter evenly among the 12 muffin cups using a spoon or ice cream scoop. Sprinkle reserved chocolate chips on top.
  8. Bake for 20–25 minutes, checking at 20 minutes with a toothpick; it should come out mostly clean with a few moist crumbs.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Grate zucchini finely and squeeze out excess moisture to avoid soggy muffins. Do not overmix the batter to keep muffins tender. Use room temperature eggs for better mixing. Mini chocolate chips distribute evenly and melt well. Muffins freeze well when wrapped individually.
