  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (45g) rolled oats
  • 1/3 cup (70g) brown sugar
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch (20×20 cm) baking dish with butter or non-stick spray.
  2. In a large bowl, combine mixed berries, granulated sugar, lemon juice, vanilla extract, and a pinch of salt. Toss gently to coat the berries without mashing. Set aside to macerate.
  3. In another bowl, mix all-purpose flour, rolled oats, brown sugar, ground cinnamon, and a pinch of salt.
  4. Add cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter, two forks, or fingers to work the butter into the mixture until it resembles coarse crumbs with pea-sized pieces.
  5. Pour the berry mixture into the prepared baking dish and spread evenly.
  6. Sprinkle the crumble topping evenly over the berries without packing it down.
  7. Bake for 35-40 minutes until the topping is golden brown and crisp and the berry juices are bubbling around the edges. Tent with foil if topping browns too quickly.
  8. Let the crumble cool slightly for about 10 minutes before serving. Serve warm, ideally with vanilla ice cream or whipped cream.

Keep the butter cold to ensure a crisp topping. Avoid overmixing the topping to maintain pea-sized crumbs. Adjust sugar based on berry sweetness.
