Ingredients

  • Italian sub roll or hoagie roll (soft and sturdy)
  • Slices of Italian deli meats: salami, pepperoni, capicola
  • Thinly sliced provolone cheese
  • Fresh lettuce (romaine or iceberg)
  • Thin slices of tomato, seeds removed
  • Thinly sliced red onion (optional)
  • Herb oil or Italian dressing (2 tablespoons olive oil, 1 tablespoon red wine vinegar, 1/2 teaspoon dried oregano, pinch of salt, dash of black pepper)
  • Salt and pepper to taste
  • Garlic powder (light sprinkle on bread)

Instructions

  1. Slice the Italian sub roll lengthwise into thin, flat slices about 1/2 inch thick.
  2. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the herb oil. Set aside.
  3. Lightly brush each bread slice with the herb oil mixture, then sprinkle a tiny bit of garlic powder on top.
  4. Layer 2-3 slices of Italian deli meats on each bread slice, followed by one slice of provolone cheese. Add a few leaves of lettuce, a couple of tomato slices, and thin rings of red onion if using. Season the veggies lightly with salt and pepper.
  5. Starting at one short end, gently roll the bread slice around the fillings, keeping it snug but not too tight to avoid tearing. Secure with a toothpick if needed.
  6. Arrange the roll-ups on a plate and serve immediately, or cover and refrigerate for up to 2 hours if making ahead.

Notes

If bread feels dry or breaks easily, dampen a clean kitchen towel and wrap the roll slices for a few minutes to soften before assembling. Avoid overfilling to keep roll-ups neat.
