These easy football-shaped Rice Krispie treats are soft, chewy, and sturdy enough to hold their form for hours on a snack table. Made without any special cookie cutters, they’re the perfect last-minute game day snack that looks impressive without the stress.

Ingredients

Scale
  • 6 tablespoons unsalted butter
  • 10 oz bag marshmallows (about 40 large marshmallows)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • 6 cups crispy rice cereal
  • Non-stick cooking spray
  • Chocolate candy melts or frosting (optional, for laces)

Instructions

  1. Prep your workspace. Lay out a large sheet of parchment paper on your counter. Lightly spray it with non-stick cooking spray. Set aside a small bowl of water nearby.
  2. Melt the butter. In a large pot over medium-low heat, melt 6 tablespoons of unsalted butter. Stir occasionally with your rubber spatula. Let it melt completely but don’t let it brown—you want it golden, not nutty. This takes about 2-3 minutes.
  3. Add the marshmallows. Pour in the entire 10 oz bag of marshmallows. Stir constantly as they melt, scraping the bottom and sides of the pot. This takes about 4-5 minutes. The mixture should be smooth and glossy with no lumps.
  4. Season it. Remove the pot from heat. Stir in 1 teaspoon of vanilla extract and ¼ teaspoon of fine sea salt. Mix until fully incorporated.
  5. Add the cereal. Pour in 6 cups of crispy rice cereal. Fold it gently into the marshmallow mixture using a cutting motion with your spatula. Don’t stir too aggressively or you’ll crush the cereal. Fold until every piece is coated, about 1-2 minutes.
  6. Cool slightly. Let the mixture sit in the pot for 2-3 minutes. It needs to be cool enough to handle but still warm and pliable.
  7. Shape the footballs. Lightly spray your hands with non-stick spray or dip them in the bowl of water. Scoop out about ¼ cup of the mixture. Roll it into a ball, then gently elongate it into an oval shape. Pinch the ends slightly to taper them. Place it on the parchment paper. Repeat with the remaining mixture. You should get about 12-14 footballs depending on size.
  8. Let them set. Allow the shaped treats to cool completely at room temperature, about 15-20 minutes. They’ll firm up as they cool.
  9. Add the laces (optional). Melt a small amount of chocolate candy melts or use a tube of frosting. Pipe a line down the center of each football, then add small crosswise lines to mimic laces. Let the chocolate set for 10 minutes before serving.

Notes

Work quickly once the marshmallows are melted—they set fast. Don’t overwork the mixture when shaping or the treats will get dense. Use fresh marshmallows for the best melt. Keep a bowl of water nearby to dip your fingers in to prevent sticking. The treats can be stored in an airtight container at room temperature for up to 3 days. Do not refrigerate. Undecorated footballs can be frozen for up to 2 months.
