  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear (about 30 seconds) to remove excess starch.
  2. Heat olive oil in a medium saucepan over medium heat. Add the rinsed rice and stir continuously for 3-5 minutes until grains turn light golden and smell nutty.
  3. Add the chopped onion and minced garlic to the pan. Stir for 2-3 minutes until onion softens and becomes translucent, avoiding burning the garlic.
  4. Stir in ground cumin and chili powder. Pour in the canned diced tomatoes with juices and cook for 2 minutes to meld flavors.
  5. Add the broth and a pinch of salt. Stir once, increase heat to high, and bring to a boil.
  6. Reduce heat to low, cover tightly with a lid, and simmer gently for 18-20 minutes without lifting the lid.
  7. Turn off heat and let the rice rest, covered, for 5-7 minutes to finish steaming.
