Tender, sticky-sweet honey garlic chicken thighs made in the slow cooker with just 6 simple ingredients. A quick and easy weeknight dinner that tastes like you fussed for hours.

Ingredients

Scale
  • 2 pounds (900g) boneless, skinless chicken thighs
  • ⅓ cup (110g) honey
  • ⅓ cup (80ml) low-sodium soy sauce
  • 45 cloves garlic, minced (about 2 teaspoons)
  • 2 tablespoons (30g) ketchup
  • 1 teaspoon dried basil
  • Optional: sesame seeds and sliced green onions for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Place thighs in a single layer in the slow cooker.
  2. In a small bowl, whisk together honey, low-sodium soy sauce, minced garlic, ketchup, and dried basil. Adjust sweetness or saltiness to taste.
  3. Pour the sauce over the chicken thighs. Do not stir. Cover and cook on LOW for 3 hours.
  4. After 3 hours, use tongs to carefully flip each chicken thigh over. The sauce will look thin.
  5. Remove the lid and continue cooking on LOW for 1 to 2 hours, uncovered, until the sauce thickens into a sticky glaze.
  6. Check that chicken is fork-tender and internal temperature reaches 165°F (74°C). If sauce is too thin, cook uncovered for another 30 minutes.
  7. Turn off the slow cooker and let the chicken rest in the sauce for 5 minutes. Spoon sauce over chicken before serving. Garnish with sesame seeds and sliced green onions if desired.

Notes

The key to a thick, sticky glaze is cooking uncovered for the last 1-2 hours. Do not add extra liquid—chicken thighs release enough moisture. Fresh garlic is recommended over pre-minced for best flavor. For gluten-free, use tamari or coconut aminos instead of soy sauce.
