  • 2 tablespoons rice vinegar

Instructions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture. Place them in the bottom of a 4-6 quart slow cooker in a single layer if possible.
  2. In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, and red pepper flakes until well incorporated.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on Low for 4 to 5 hours, or on High for 2 to 3 hours, until the chicken is tender and easily pulls apart with a fork.
  5. Once cooked, remove the chicken from the pot and set aside on a plate.

If you prefer a thicker sauce, do not skip the cornstarch slurry step. Leftovers can be stored in the refrigerator for up to four days. Freezing is not recommended for the sauce if cornstarch has been added, as it may become grainy upon thawing.
