  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes with green chiles (like Rotel)
  • 1 (4-ounce) can diced green chiles
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup low-sodium chicken broth
  • Cooked rice (white, brown, or cauliflower rice)
  • Shredded lettuce, diced tomatoes, shredded cheese, sour cream or Greek yogurt, sliced avocado or guacamole, fresh cilantro, lime wedges, salsa or hot sauce (for serving)

Instructions

  1. Brown the turkey. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until it’s no longer pink—about 5-7 minutes. Don’t drain the fat; there won’t be much, and it adds flavor. If you see any liquid, let it cook off until the turkey starts to brown slightly.
  2. Sauté the aromatics. Add the diced onion to the skillet with the turkey. Cook for 3-4 minutes, until the onion softens and becomes translucent. Add the minced garlic and cook for 30 seconds more, until fragrant.
  3. Transfer to the slow cooker. Carefully transfer the turkey and onion mixture to your slow cooker.
  4. Add the remaining ingredients. Pour in the diced tomatoes with green chiles (undrained), diced green chiles (undrained), chili powder, cumin, smoked paprika (if using), oregano, salt, pepper, and chicken broth. Stir everything together until well combined.
  5. Slow cook. Cover the slow cooker and cook on LOW for 2-3 hours or on HIGH for 1-2 hours. The longer it cooks, the more the flavors meld together. I prefer 2 hours on LOW for the best texture.
  6. Prepare the rice. While the turkey cooks, prepare your rice according to package directions.
  7. Assemble the bowls. To serve, spoon a generous portion of rice into each bowl. Top with the turkey taco mixture. Add your desired toppings: shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream or Greek yogurt, sliced avocado, fresh cilantro, and a squeeze of lime. Finish with a drizzle of salsa or hot sauce if you like heat.
  8. Taste and adjust. Before serving, give the turkey mixture a taste. Add more salt, chili powder, or a pinch of cayenne if you want more heat.

Notes

Don’t skip browning the turkey—it adds depth of flavor. Use 93/7 ground turkey for best moisture. Stick to recommended cooking times to avoid dry meat. If mixture is too thin, remove lid and cook on HIGH for 15-20 minutes to reduce. Leftovers taste even better the next day.
