A simple, 15-minute prep slow cooker meal featuring tender chicken, fluffy rice, and mixed vegetables. Perfect for weekly meal prep, this dish is budget-friendly, gluten-free adaptable, and designed to save time on busy weeknights.

Ingredients

  • Boneless, skinless chicken breasts (medium-sized, cut into 1-inch cubes)
  • Long-grain white rice (Jasmine or Basmati also work)
  • Low-sodium chicken broth
  • Frozen mixed vegetables (peas, carrots, corn)
  • Soy sauce (or Tamari for gluten-free)
  • Garlic powder
  • Onion powder
  • Butter (1 tablespoon)
  • Salt and black pepper to taste
  • Non-stick cooking spray

Instructions

  1. Spray the inside of a 4-quart or 6-quart slow cooker with non-stick cooking spray to prevent sticking.
  2. Cut chicken breasts into 1-inch cubes and place them in the bottom of the slow cooker.
  3. Sprinkle chicken with garlic powder, onion powder, salt, and pepper; toss gently to coat.
  4. Pour uncooked rice over the chicken, then add chicken broth and soy sauce. Do not stir yet.
  5. Scatter frozen mixed vegetables on top of the rice and liquid layers.
  6. Cover and cook on LOW for 4 to 6 hours. Do not cook on HIGH. Check at 4 hours to ensure rice is tender and chicken reaches 165ยฐF.
  7. Turn off the slow cooker and let it sit covered for 10 minutes to allow rice to absorb remaining liquid.
  8. Fluff the mixture with a fork and stir in the tablespoon of butter before serving.

Notes

Do not cook on HIGH as it can make rice mushy and chicken rubbery. If using a 6-quart pot with a smaller recipe, you may need slightly more liquid. For best results, use fresh chicken; if using frozen, thaw completely first. Let the dish rest for 10 minutes after cooking to firm up the rice.
