This incredibly easy slow cooker chicken and dumplings recipe uses refrigerated biscuit dough for pillowy dumplings and a creamy, rich broth. With just 15 minutes of prep, it’s the perfect weeknight comfort food that tastes like you simmered it all day.

  • 1.5 pounds boneless, skinless chicken breasts (34 medium)
  • 4 cups low-sodium chicken broth
  • 2 cans (10.5 ounces each) cream of chicken soup
  • 4 tablespoons unsalted butter, cut into cubes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 1 can (16.3 ounces) refrigerated biscuit dough (like Pillsbury Grands! Homestyle)
  • 1 cup frozen peas and carrots
  • Β½ cup frozen corn (optional)

Instructions

  1. Lightly spray the inside of a 6-quart slow cooker with nonstick cooking spray. Place the diced onion and minced garlic in an even layer at the bottom.
  2. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried thyme. Place the chicken on top of the onions and garlic.
  3. In a medium bowl, whisk together the chicken broth and both cans of cream of chicken soup until smooth. Pour this mixture over the chicken.
  4. Scatter the cubed butter over the top of the liquid. Do not stir.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and shreds easily.
  6. Carefully remove the chicken from the slow cooker and shred with two forks (or use a hand mixer on low speed). Return the shredded chicken to the pot and stir.
  7. Stir in the frozen peas and carrots (and corn, if using). Let cook uncovered for about 10 minutes.
  8. Open the can of biscuit dough and cut each biscuit into quarters.
  9. Gently drop the biscuit pieces into the slow cooker, pushing them down slightly to submerge. Cover and cook on HIGH for 30-45 minutes, until the dumplings are puffed and cooked through.
  10. Stir gently, adjust seasoning with salt and pepper, and serve hot.

Notes

For best results, do not lift the lid during cooking. Add dumplings only when broth is very hot. Leftovers thicken as dumplings absorb liquid; add a splash of broth when reheating. To freeze, freeze the chicken and broth mixture before adding dumplings.
