These Easy Crockpot Buffalo Chicken Sliders are the perfect crowd-pleaser for game day, potlucks, or a quick weeknight dinner. The slow cooker does all the work, delivering tender, juicy chicken in a perfectly balanced buffalo sauce that’s not too spicy.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup unsalted butter, cut into cubes
  • 1 packet (3 tablespoons) ranch seasoning mix
  • 1 teaspoon garlic powder
  • 12 to 16 slider buns (Hawaiian sweet rolls recommended)
  • Blue cheese dressing (for serving)
  • Celery sticks (for serving)
  • Optional toppings: thinly sliced red onion, shredded lettuce, pickled jalapeños, extra hot sauce

Instructions

  1. Pat the chicken breasts dry with paper towels. Trim off any visible fat or connective tissue. Place the chicken in the bottom of your crockpot in a single layer as much as possible.
  2. In a medium bowl, whisk together the Frank’s RedHot, cubed unsalted butter, ranch seasoning mix, and garlic powder. Pour this mixture evenly over the chicken breasts.
  3. Cover the crockpot with the lid and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours, until the chicken shreds easily with a fork and reaches an internal temperature of 165°F.
  4. Carefully remove the cooked chicken breasts from the crockpot and place them on a cutting board or large plate. Use two forks to shred the chicken into bite-sized pieces. Alternatively, use an electric hand mixer on low speed right in the crockpot.
  5. Return the shredded chicken to the crockpot with the sauce. Stir well to coat every piece. Let it sit on WARM or LOW for another 10 to 15 minutes while you prepare the buns.
  6. Split your slider buns in half and place them cut-side up on a baking sheet. Toast them under the broiler for 1 to 2 minutes, watching closely, until lightly golden.
  7. Place the bottom halves of the toasted buns on your serving platter or baking sheet. Using a slotted spoon, pile the buffalo chicken onto each bun. Top with a drizzle of blue cheese dressing and a few celery sticks if desired.
  8. Place the top halves of the buns on the sliders. Serve immediately while the chicken is warm and the buns are still slightly crisp.

Notes

Don’t skip the ranch seasoning—it adds a savory depth. Toast the buns to prevent sogginess. Use a slotted spoon to let excess sauce drip off. Let the chicken rest in the sauce after shredding for extra flavor. For extra sauce, double the hot sauce and butter mixture and reserve half for dipping.
