  • Garlic powder (½ teaspoon)

  • Panko breadcrumbs (½ cup)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Roast the butternut squash: Toss cubed squash with 1 tablespoon olive oil, a pinch of salt, and pepper. Spread in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until fork-tender and caramelized.
  3. Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente (1-2 minutes less than recommended). Drain and set aside. Do not rinse.
