easy creamy basic coleslaw - featured image

A quick and easy creamy coleslaw made with a 5-ingredient pre-shredded veggie mix and simple pantry staples, perfect for barbecues, potlucks, and everyday meals.

Ingredients

Scale
  • 1 (about 14 oz) 5-ingredient coleslaw bag mix (shredded green cabbage, purple cabbage, carrots, green onions or kale)
  • 1/2 cup (120 ml) mayonnaise
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 tablespoon (15 ml) honey or sugar
  • Salt and pepper, to taste
  • Optional: 1 teaspoon Dijon mustard
  • Optional: celery seeds
  • Optional: vegan mayo and maple syrup for dairy-free version

Instructions

  1. Open your 5-ingredient coleslaw bag mix and pour it into a large mixing bowl. Fluff with hands or a spoon to separate clumps (1-2 minutes).
  2. In a small bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons apple cider vinegar, and 1 tablespoon honey until smooth. Add Dijon mustard or celery seeds if using (2-3 minutes).
  3. Season the dressing with a pinch of salt and freshly cracked black pepper. Taste and adjust seasoning as needed.
  4. Pour the dressing over the veggies. Gently fold the dressing into the coleslaw mix using a spatula until evenly coated, being careful not to overmix (3-4 minutes).
  5. Cover the bowl with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least 30 minutes before serving.
  6. Before serving, stir the coleslaw again and add extra salt or vinegar if desired.

Notes

Do not overmix to keep the crunch. Chill for at least 30 minutes to let flavors meld. For less creamy, swap half the mayo with Greek yogurt. Dressing can be made a day ahead and stored refrigerated. Use vegan mayo and maple syrup for a dairy-free version.
