Easy Cinnamon Sugar Apple Fritter Bread

This easy cinnamon sugar apple fritter bread has all the gooey, spiced goodness of a fried fritter in a sliceable, shareable loaf form. It’s perfect for breakfast, dessert, or an afternoon snack.

  • 2 medium apples, peeled, cored, and diced (Honeycrisp or Granny Smith)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon unsalted butter, melted
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving a little overhang on the long sides.
  2. Make the cinnamon sugar swirl: In a small bowl, whisk together 1/3 cup granulated sugar and 2 teaspoons cinnamon. Set aside.
  3. Prepare the apples: In a medium bowl, toss the diced apples with 2 tablespoons sugar, 1 teaspoon cinnamon, and 1 tablespoon flour. Heat a small skillet over medium heat and cook the apples for about 3-4 minutes, just until they start to soften and the sugar begins to caramelize. Let them cool while you make the batter.
  4. Cream the butter and sugar: In a large bowl, beat the softened butter and 2/3 cup sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl.
  5. Add the eggs and vanilla: Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Then stir in the vanilla extract.
  6. Combine the dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Alternate adding dry ingredients and buttermilk: Add about a third of the flour mixture to the butter mixture and mix on low speed until just combined. Pour in half the buttermilk and mix again. Repeat with another third of flour, the remaining buttermilk, and finally the last of the flour. Mix until just combined.
  8. Fold in the apples: Gently fold the cooled cooked apples into the batter using a rubber spatula.
  9. Layer the batter and cinnamon sugar: Pour half the batter into the prepared loaf pan and spread it evenly. Sprinkle about two-thirds of the cinnamon sugar mixture over the batter. Spoon the remaining batter on top and spread it gently. Sprinkle the rest of the cinnamon sugar on top.
  10. Bake: Place the pan in the center of the oven and bake for 50-60 minutes. At the 45-minute mark, check the top. If it’s browning too fast, tent the pan loosely with aluminum foil. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  11. Cool and finish: Let the bread cool in the pan for 15 minutes, then use the parchment to lift it onto a cooling rack. While it’s still warm, brush the top with the melted butter and sprinkle with a little extra cinnamon sugar if desired. Let it cool completely before slicing.

Notes

Don’t skip cooking the apples first to prevent a soggy bread. Room temperature ingredients are important for proper creaming. Let the bread cool completely before slicing to avoid crumbling. The flavors deepen on the second day.
