  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or avocado oil
  • Fresh rosemary or thyme sprigs (optional)
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup cream cheese, softened
  • 1/2 cup warm whole milk or half-and-half
  • Salt and pepper, to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, smoked paprika, garlic powder, and onion powder. Let rest at room temperature for about 15 minutes.
  2. Place peeled and quartered Yukon Gold potatoes in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes until tender. Drain well.
  3. Preheat oven to 400°F (200°C). Heat olive oil in a large cast iron skillet over medium-high heat. Add chicken thighs skin-side down and sear without moving for 7-9 minutes until skin is golden and crispy. Flip and cook for another 3 minutes.
  4. Add rosemary or thyme sprigs if using. Transfer skillet to oven and roast for 15-20 minutes until internal temperature reaches 165°F (74°C). If skillet is not oven-safe, transfer chicken to a baking dish before roasting.
  5. While chicken roasts, mash drained potatoes with butter and cream cheese until smooth. Gradually add warm milk or half-and-half, mixing until creamy. Season with salt and pepper to taste.
  6. Serve chicken thighs alongside a generous scoop of mashed potatoes. Garnish potatoes with chopped chives or parsley if desired.

Notes

Pat chicken skin dry before cooking for best crispiness. Do not overcrowd the pan to avoid steaming. Warm dairy before adding to mashed potatoes to prevent gluey texture. If chicken skin is not crispy enough after roasting, broil for 2-3 minutes watching closely.
