A quick and easy weeknight dinner featuring store-bought pumpkin gnocchi crisped in nutty brown butter with fresh sage and Parmesan cheese.

Ingredients

Scale
  • 100% pure pumpkin puree (for context, though store-bought gnocchi is used)
  • 1/2 cup unsalted butter
  • 1 large handful fresh sage leaves
  • 1 package store-bought pumpkin gnocchi (fresh or frozen, thawed)
  • All-purpose flour (for dusting)
  • Freshly grated Parmesan cheese
  • Red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Grate the Parmesan cheese and chop fresh sage if leaves are large. Rinse sage leaves and pat them completely dry with paper towels.
  2. Bring a large pot of salted water to a rolling boil. Add pumpkin gnocchi and cook according to package directions (usually 2-3 minutes) until they float.
  3. Remove gnocchi with a slotted spoon, letting excess water drip off. Do not rinse.
  4. While gnocchi boils, melt butter in a large skillet over medium heat. Stir constantly until butter turns deep amber and smells nutty (3-5 minutes).
  5. Add fresh sage leaves to the browned butter. Fry for 30 seconds to 1 minute until crispy and dark green. Remove sage with a slotted spoon and set aside.
  6. Add boiled gnocchi to the same skillet with brown butter. Let sit undisturbed for 1-2 minutes to form a golden crust, then toss to brown the other side.
  7. Return crispy sage to the pan. Sprinkle with Parmesan cheese. Toss gently to coat gnocchi in sauce and cheese.
  8. Season with salt, pepper, and red pepper flakes to taste. Plate immediately and garnish with extra sage.

Notes

Ensure sage leaves are completely dry before adding to butter to ensure crispiness. Do not overcrowd the pan; cook in batches if necessary. Serve immediately as gnocchi can become soggy if left to sit. For a gluten-free option, use certified gluten-free gnocchi.
