These easy holiday appetizers feature flaky, buttery puff pastry filled with creamy brie cheese and tart cranberry sauce, baked until golden and crisp.

  • 1 sheet frozen puff pastry, thawed
  • 8–12 oz wheel of brie cheese, cut into small cubes
  • Jellied or chunky cranberry sauce
  • 1 large egg beaten with 1 tablespoon water or milk
  • Flaky sea salt for sprinkling
  • Optional: fresh thyme or rosemary
  • Optional: thin slices of apple or pear

Instructions

  1. Preheat oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. Lay the thawed puff pastry on a lightly floured surface and trim uneven edges.
  3. Cut the pastry into 3-inch squares (yielding about 12 squares).
  4. Cut the brie into small cubes roughly the size of a large marble.
  5. Place one cube of brie in the center of each pastry square.
  6. Add a small dollop (about 1/2 teaspoon) of cranberry sauce on top of the cheese.
  7. Fold the corners of the square up and over the filling to the center, pinching seams tightly to seal.
  8. Flip the bites over so the seam is on the bottom.
  9. Brush the tops generously with the egg wash.
  10. Bake for 15-18 minutes, rotating the pan halfway through, until puffed and deep golden brown.
  11. Cool for 5 minutes, sprinkle with flaky sea salt, and serve warm.

Notes

Keep the pastry cold until baking to ensure proper rise. Seal the edges tightly to prevent the cheese from leaking. Do not overfill with sauce. For gluten-free, use GF puff pastry. For dairy-free, use vegan brie alternatives.
