Instructions

  1. Wash and dry 2 medium zucchinis. Cut into sticks roughly 3 inches long and ½ inch thick. Pat dry with kitchen paper towels to reduce moisture.
  2. In one bowl, beat 2 large eggs until smooth. In another bowl, combine ¾ cup panko breadcrumbs, ½ cup finely grated parmesan, 1 teaspoon garlic powder, ½ teaspoon onion powder, 1 teaspoon dried Italian herbs (optional), and salt and pepper to taste. Mix well.
  3. Dip each zucchini stick into the beaten eggs, letting excess drip off, then roll it in the breadcrumb mixture, pressing gently to ensure the coating sticks. Place coated fries on a plate.
  4. Preheat the air fryer to 400°F (200°C) and let it run empty for 3 minutes.
  5. Spray the air fryer basket lightly with cooking spray. Arrange zucchini fries in a single layer without overcrowding. Lightly spray the fries with cooking spray. Cook for 8-10 minutes, shaking the basket halfway through to ensure even cooking. Fries should be golden and crispy on the outside but tender inside.
