  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat oven to 400Β°F (200Β°C) and line a large rimmed baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly. Cut off both ends and slice crosswise into 1/2-inch thick rings. Scoop out seeds and pulp from the center of each ring.
  3. Pat the squash rings dry with a paper towel to ensure crispiness.
  4. Set up a breading station with three shallow bowls: Bowl 1 contains flour mixed with garlic powder, paprika, and a pinch of salt. Bowl 2 contains beaten eggs. Bowl 3 contains parmesan cheese mixed with dried thyme and black pepper.
  5. Dredge each squash ring in the flour mixture, shaking off excess. Dip into the egg wash, then press firmly into the parmesan mixture to coat both sides.
  6. Arrange breaded rings on the baking sheet in a single layer, ensuring they do not touch. Lightly brush the tops with olive oil.
  7. Roast for 15-18 minutes, rotating the pan halfway through, until the cheese is golden brown and crispy and the squash is tender.
  8. Serve immediately while hot and crispy.

Notes

Do not peel the delicata squash as the skin is edible and tender. Ensure the squash is completely dry before breading to prevent steaming. Do not overcrowd the pan; leave space between rings for air circulation to ensure crispiness. If the cheese browns too quickly, tent loosely with foil. For a dairy-free version, substitute parmesan with nutritional yeast or vegan parmesan. For gluten-free, use almond flour or a 1:1 GF flour blend.
