A quick and easy side dish featuring Brussels sprouts roasted with thick-cut bacon, maple syrup, and Dijon mustard for a perfect balance of sweet, salty, and crispy textures.

  • 2 lbs Brussels sprouts, trimmed and halved
  • 8 oz thick-cut bacon, chopped into small bits
  • 2 tbsp extra virgin olive oil
  • 3 tbsp real maple syrup
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, freshly minced
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Line two large baking sheets with parchment paper.
  2. Chop the bacon into small, bite-sized pieces (about 1/2 inch).
  3. Wash Brussels sprouts, trim ends, and slice in half lengthwise. Place in a large bowl.
  4. Drizzle olive oil over sprouts and season with salt and pepper. Toss well to coat evenly.
  5. Spread sprouts in a single layer on prepared baking sheets. Do not overlap. Roast for 15 minutes.
  6. Remove pan from oven. Sprinkle chopped bacon evenly over partially roasted sprouts. Return to oven for 10 minutes.
  7. While sprouts roast, whisk maple syrup, Dijon mustard, and minced garlic in a small bowl until smooth.
  8. Remove pan from oven. Brush or drizzle glaze over sprouts and bacon. Toss gently to coat.
  9. Return to oven for final 5 minutes, watching closely to prevent burning.
  10. Remove from oven and let cool for 2 minutes before serving.

Notes

Ensure sprouts are not crowded on the pan to allow for proper roasting and crispiness. Use real maple syrup, not pancake syrup. If using one baking sheet, cook in two batches. For a less sweet version, reduce syrup to 2 tablespoons and add apple cider vinegar. Leftovers can be stored in the refrigerator for up to 3 days and reheated in a toaster oven or air fryer to restore crispiness.
