A quick and easy 15-minute weeknight meal featuring crispy ground beef and crisp-tender broccoli coated in a sweet and savory honey garlic glaze.

  • 1.5 lbs 80/20 ground beef
  • 1 large head broccoli, cut into florets
  • 4–5 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1/4 cup raw honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 tablespoon water (for mixing cornstarch)
  • 2–3 stalks green onions, sliced
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon oil (optional, if using lean beef)

Instructions

  1. Cut broccoli into bite-sized florets and set aside.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, and 2 tablespoons of water.
  3. In a separate tiny bowl, mix cornstarch with 1 tablespoon of water until smooth, then whisk into the honey-soy mixture.
  4. Heat a large skillet over medium-high heat. Add ground beef and let it sear undisturbed for 1 minute.
  5. Break beef into small crumbles and cook for 5-6 minutes until browned with crispy edges. Drain excess grease if necessary.
  6. Push beef to the side, add a bit more oil if needed, and cook garlic and ginger in the empty space for 30 seconds until fragrant.
  7. Mix beef, garlic, and ginger together. Pour the sauce mixture over everything and stir constantly until the sauce bubbles and thickens (1-2 minutes).
  8. Toss in broccoli florets to coat in sauce. Cover the pan with a lid for 2-3 minutes to steam the broccoli until crisp-tender.
  9. Remove lid and cook uncovered for another minute if there is excess liquid. Garnish with green onions and sesame seeds. Serve immediately.

Notes

Do not overcrowd the pan to ensure the beef gets crispy rather than steaming. Let the beef sear for the first minute to develop flavor. If using frozen broccoli, thaw and squeeze out all excess water. For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
