  • 1 1/4 cups (155g) all-purpose flour
  • 4 tablespoons (56g) unsalted butter, cold and cubed
  • 23 tablespoons cold water
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon mustard powder (optional)

Instructions

  1. Grate the cheddar cheese using the large holes on a box grater and keep chilled until ready to use.
  2. In a large bowl, combine all-purpose flour, salt, garlic powder (if using), and mustard powder (if using). Whisk together.
  3. Add cold, cubed unsalted butter and cut into the flour mixture using a food processor or pastry cutter until mixture resembles coarse crumbs.
  4. Add shredded cheddar cheese and toss gently to combine evenly.
  5. Pour 2 tablespoons cold water and stir gently; add an extra tablespoon if dough feels too dry. Dough should come together but not be sticky.
  6. Shape dough into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  7. Preheat oven to 350Β°F (175Β°C). Line baking sheets with parchment paper or silicone mats.
  8. Roll dough out on a lightly floured surface to about 1/8 inch (3 mm) thickness.
  9. Cut dough into goldfish shapes using a cookie cutter and place about 1 inch apart on baking sheets. Re-roll scraps and cut more shapes.
  10. Bake for 12-15 minutes until crackers are golden and crisp, rotating baking sheets halfway through.
  11. Transfer crackers to wire racks to cool completely; they will crisp further as they cool.
