  • 3 medium zucchini (about 1 pound / 450 grams), grated and squeezed dry
  • 2 large eggs, lightly beaten, room temperature
  • Β½ cup (60 grams) all-purpose flour or chickpea flour for gluten-free
  • ΒΌ cup (25 grams) finely crumbled feta cheese (optional)
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 small garlic clove, minced (optional)
  • Β½ teaspoon salt
  • ΒΌ teaspoon black pepper
  • Zest of 1 lemon (optional)
  • Olive oil or vegetable oil for frying

Instructions

  1. Grate the zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and wring out as much liquid as possible.
  2. In a large bowl, combine the squeezed zucchini, beaten eggs, flour, crumbled feta (if using), chopped dill, mint, parsley, minced garlic, salt, pepper, and lemon zest. Stir until just combined.
  3. Heat about 2 tablespoons of olive oil or vegetable oil in a non-stick or cast-iron skillet over medium heat until shimmering but not smoking.
  4. Drop portions of the batter (about 1 tablespoon each) into the hot oil. Flatten gently with the back of a spatula to form patties about 2-3 inches in diameter. Fry in batches without overcrowding the pan.
  5. Cook each side for 3-4 minutes or until golden brown and crisp. Adjust heat as needed to avoid burning.
  6. Transfer cooked fritters to a plate lined with paper towels to drain excess oil. Serve warm with lemon juice or a dollop of Greek yogurt or tzatziki.

Notes

Remove excess moisture from zucchini to prevent soggy fritters. Use medium heat for frying to avoid burning or greasy fritters. If batter is too loose, add more flour a tablespoon at a time. Keep cooked fritters warm in a low oven if frying in batches. Baking is possible but results in less crispy fritters.
