  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Salt to taste (kosher salt recommended)

Instructions

  1. Preheat the oven to 425Β°F (220Β°C). Place your baking dish or skillet in the oven while it preheats to get it hot.
  2. In a mixing bowl, combine softened unsalted butter, minced garlic, chopped fresh thyme, rosemary, parsley, and lemon zest. Mix well and season with a pinch of salt and pepper. Let sit for a few minutes at room temperature.
  3. Pat the chicken thighs dry with paper towels. Season both sides generously with kosher salt and freshly cracked black pepper.
  4. Heat olive oil in the hot skillet or baking dish on the stove over medium-high heat. Add chicken thighs skin-side down and press gently to ensure contact. Cook for 5-7 minutes until the skin is golden brown and crispy. Avoid moving the chicken too much.
  5. Flip the chicken thighs over and spoon half of the garlic herb butter mixture over the top.
