Roasted delicata squash rings tossed in olive oil and spices, finished with a sticky, caramelized maple glaze. The skin is left on for added fiber and texture, resulting in a crispy, sweet, and savory side dish.

  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Line a large rimmed baking sheet with parchment paper and lightly grease with olive oil.
  2. Wash and dry the delicata squash thoroughly. Slice off the top and bottom stems to create flat surfaces.
  3. Cut the squash in half lengthwise and scoop out the seeds and pulp with a spoon.
  4. Slice the squash halves into 1/2-inch thick rings, ensuring they are uniform for even cooking.
  5. Place the rings in a large mixing bowl. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  6. Arrange the rings in a single layer on the prepared baking sheet, ensuring they are not touching to allow for proper browning.
  7. Roast for 20 minutes until tender and slightly browned at the edges.
  8. While roasting, mix the maple syrup with a pinch of salt in a small bowl.
  9. Remove the pan from the oven and brush the maple glaze over the hot squash rings.
  10. Return to the oven and roast for another 10-15 minutes until the glaze is bubbly and caramelized.
  11. Remove from oven and let cool for 5 minutes to allow the glaze to set. Garnish with fresh parsley and serve immediately.
