Crispy Caesar Salad Recipe with Homemade Dressing and Parmesan Crisps Made Easy

  • 2 heads romaine lettuce, washed and chopped
  • Parmesan cheese, freshly grated (for crisps and garnish)
  • Fresh lemon juice
  • ½ cup mayonnaise
  • 2 anchovy fillets, finely minced
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons grated Parmesan cheese (for dressing)
  • Parmesan cheese, shredded or grated (for crisps)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Place small mounds (about 1 tablespoon or 15g) of grated parmesan spaced about 2 inches apart on the baking sheet. Flatten slightly with the back of a spoon.
  3. Bake for 5-7 minutes until golden and crisp. Watch closely to avoid burning. Remove and cool on a wire rack.
  4. In a mixing bowl, combine ½ cup mayonnaise, 2 minced anchovy fillets, 1 minced garlic clove, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, juice of half a lemon (about 1 tablespoon), and a pinch of black pepper.
  5. Whisk while slowly drizzling in 2 tablespoons olive oil until dressing is smooth and slightly thickened.
  6. Stir in 2 tablespoons grated parmesan cheese. Taste and adjust lemon or anchovy as desired.
  7. Wash and dry 2 heads of romaine lettuce thoroughly. Chop into bite-sized pieces.
  8. Place chopped lettuce into a large salad bowl. Drizzle about half of the dressing over the lettuce and toss gently but thoroughly to coat every leaf.
  9. Add more dressing if desired, but avoid overdressing.
  10. Plate the tossed salad. Sprinkle freshly grated parmesan cheese on top, then garnish with the parmesan crisps.
  11. Squeeze a little extra lemon juice over the salad before serving if desired.

Notes

Do not overdress the lettuce to keep it crisp. Dry lettuce thoroughly before tossing. Watch parmesan crisps carefully while baking to avoid burning. Let dressing rest for 10 minutes to meld flavors. Parmesan crisps can be made ahead and stored airtight for 1-2 days; reheat briefly to restore crunch.
