  • 12 medium to large fresh jalapeños, washed and halved lengthwise, seeds removed or kept for heat
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • 1/3 cup BBQ sauce (optional, for brushing)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare grill to medium-high heat.
  2. Wash and dry jalapeños. Slice each in half lengthwise and remove seeds and membranes using a small spoon or paring knife. Set aside.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and pepper. Stir until smooth and well blended.
  4. Spoon the cheese mixture into each jalapeño half, filling generously but not overstuffing.
  5. Wrap each stuffed jalapeño with a slice of bacon, spiraling from tip to cover the whole popper. Secure with a toothpick if needed.
  6. Arrange poppers on a wire rack over a baking sheet or directly on a foil-lined baking sheet if no rack is available.
  7. Brush each popper lightly with BBQ sauce if using.
  8. Bake for 25-30 minutes until bacon is crisp and cheese filling bubbles. Optionally broil for 1-2 minutes for extra crispiness, watching carefully.
  9. Remove from oven and let cool for 5 minutes to set the cheese.
  10. Garnish with chopped cilantro or parsley and serve warm.
