Crispy, spicy, and totally addictive oven-baked buffalo cauliflower bites with a cool ranch drizzle. A lighter, vegetarian twist on classic buffalo wings that’s perfect for game day or snack cravings.

  • 1 large head of cauliflower (about 45 cups florets)
  • 1 cup all-purpose flour
  • 1 cup water (room temperature)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • ½ cup hot sauce (e.g., Frank’s RedHot original)
  • ¼ cup unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • ½ cup plain Greek yogurt (full-fat preferred)
  • ¼ cup buttermilk
  • 1 teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh chives, chopped (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper and place a cooling rack on top if available.
  2. Wash the cauliflower and cut into bite-sized florets (1½ to 2 inches). Pat dry thoroughly with a clean kitchen towel.
  3. In a medium bowl, whisk together flour, water, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. Batter should coat the back of a spoon but still be pourable.
  4. In a separate shallow bowl, combine panko breadcrumbs and olive oil. Rub oil into panko with fingers until evenly coated.
  5. Working in batches, dip florets into batter, letting excess drip off, then roll in panko mixture until fully coated. Place on prepared baking sheet, spaced about 1 inch apart.
  6. Bake for 18-20 minutes, then flip each floret gently with tongs. Bake for another 10-12 minutes until deep golden brown and cauliflower is tender.
  7. While cauliflower bakes, melt butter in a small saucepan over low heat or in a microwave-safe bowl (about 30 seconds). Whisk in hot sauce, honey, and Worcestershire sauce until smooth. Keep warm.
  8. When cauliflower is done, transfer to a large bowl. Pour about two-thirds of the buffalo sauce over the top and toss gently with tongs until coated. Add more sauce if desired.
  9. Arrange sauced bites on a serving platter. Drizzle ranch dressing over the top in a zigzag pattern. Sprinkle with fresh chives if using. Serve immediately.

Notes

Pat cauliflower very dry to prevent soggy coating. The panko-oil mixture is essential for crunch. Serve immediately for best texture. For make-ahead, bake and freeze without sauce, then reheat and sauce before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in air fryer or oven, not microwave.
