A quick, healthy, and addictive snack made by roasting fresh pumpkin seeds with olive oil and smoked paprika in an air fryer until golden and crisp.

Ingredients

  • 1 cup raw, cleaned fresh pumpkin seeds
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coarse sea salt
  • 1 pinch freshly cracked black pepper
  • 1 pinch red pepper flakes (optional)

Instructions

  1. Cut the pumpkin in half and scoop out the seeds. Place them in a bowl of water; discard any seeds that float.
  2. Pour the seeds into a fine-mesh strainer and rinse thoroughly under cold water, rubbing off any remaining pumpkin flesh until smooth.
  3. Spread the rinsed seeds on a clean kitchen towel or paper towels and pat them dry to remove excess moisture.
  4. Place the damp seeds in a dry bowl and add olive oil, smoked paprika, garlic powder, salt, and pepper. Toss well until every seed is evenly coated.
  5. Preheat the air fryer to 325Β°F (160Β°C) for about 3 minutes.
  6. Place the seeds in the air fryer basket in a single layer, ensuring not to overcrowd the basket.
  7. Cook for 10 to 12 minutes, shaking the basket every 3 to 4 minutes to ensure even browning.
  8. Remove the seeds when they are golden brown and make a clicking sound when tapped. Let them cool for 5 minutes to crisp up before eating.

Notes

Ensure seeds are damp but not wet before cooking to prevent steaming. Shake the basket frequently to avoid hot spots. Seeds will continue to crisp as they cool. Store in an airtight container at room temperature for up to one week.
