This recipe delivers crispy, juicy chicken thighs cooked in an air fryer, perfect for a quick and easy keto-friendly low-carb meal without any breading.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700 g)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano (optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Pat the chicken thighs dry thoroughly with paper towels to ensure crispy skin.
  2. Place the chicken thighs in a mixing bowl. Drizzle with olive oil and sprinkle garlic powder, smoked paprika, onion powder, oregano, salt, and black pepper evenly over them. Toss to coat evenly.
  3. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  4. Arrange the chicken thighs skin-side down in the air fryer basket, making sure they do not touch.
  5. Air fry at 400°F (200°C) for 12 minutes.
  6. Flip the chicken thighs skin-side up using tongs and cook for another 10 to 12 minutes, or until the skin is golden brown and an internal temperature of 165°F (74°C) is reached.
  7. Remove the chicken thighs from the air fryer and let rest for 5 minutes before serving.

Notes

Patting the chicken dry is crucial for crispy skin. Do not overcrowd the air fryer basket to avoid steaming. Preheat the air fryer for best results. Rest chicken after cooking to lock in juices. Rotate basket halfway through cooking if needed. For extra crispiness, add a couple of minutes but watch carefully to avoid burning. Leftovers reheat well in the air fryer at 350°F for 5-7 minutes.
