Instructions

  1. Pat each chicken thigh thoroughly with paper towels to dry the skin. Let them air-dry on a rack for 15 minutes if time allows.
  2. In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, and onion powder.
  3. Rub the chicken thighs all over with olive oil.
