  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (4 oz) diced green chilies
  • 8 oz full-fat brick-style cream cheese, softened and cubed
  • 2 cups low-sodium chicken broth
  • 1 can diced green tomatillos (or extra green chilies/lime juice)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh cilantro, chopped
  • Fresh lime juice

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add diced onion and a pinch of salt; cook until translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  2. Sprinkle in cumin and oregano. Stir constantly for 30 seconds to toast the spices.
  3. Add chicken breasts, chicken broth, diced green chilies (with juice), and tomatillos to the pot. Stir to combine.
  4. Bring mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until chicken is cooked through and shreds easily.
  5. Remove chicken from pot and shred into bite-sized pieces using two forks.
  6. Stir cubed cream cheese into the hot pot one by one, stirring constantly until completely melted and incorporated.
  7. Add shredded chicken and drained cannellini beans to the pot. Simmer for 5 minutes to heat through.
  8. Taste and season with salt and pepper. Stir in fresh cilantro and a squeeze of lime juice before serving.

Notes

For best results, let the cream cheese come to room temperature and cut it into small cubes to prevent clumping. Keep the heat low after adding dairy to prevent scorching.
