Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Place peeled sweet potato chunks in a large pot, cover with cold water, and bring to a boil. Reduce heat and simmer for 15-20 minutes until tender. Drain well.
  3. Transfer hot potatoes to a food processor. Add softened butter, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg, and salt. Pulse until a silky smooth puree forms.
  4. In a small bowl, combine chopped pecans, 1/2 cup brown sugar, flour, and cold cubed butter. Use a pastry cutter or fingers to mix until the mixture resembles coarse crumbs.
  5. Spread the sweet potato mixture evenly into a 9×13 inch baking dish.
  6. Sprinkle the pecan topping evenly over the sweet potatoes and press down gently.
  7. Bake for 25-30 minutes until the topping is golden brown and edges are bubbling. Cover loosely with foil if topping browns too quickly.
  8. Let rest for 10 minutes before serving.
