  • 2 pounds boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 medium yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 8 ounces full-fat cream cheese, softened
  • 1 tablespoon cornstarch
  • 2 cans (15 oz each) Great Northern or Cannellini beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Dice the onion and mince the garlic. Leave chicken breasts whole or cut into large chunks. Drain and rinse the white beans.
  2. Place chicken, onion, garlic, green chiles, broth, cumin, oregano, salt, and pepper into the slow cooker. Stir gently to combine.
  3. Cover and cook on low for 6-7 hours (or high for 3-4 hours).
  4. Remove chicken from the pot and shred using two forks. Return shredded chicken to the pot.
  5. Add the drained white beans and softened cream cheese to the pot. Stir well until the cream cheese is melted and incorporated.
  6. Mix cornstarch with 2 tablespoons of cold water to create a slurry. Stir into the chili and cook on high for an additional 30 minutes to thicken.
  7. Turn off the heat and stir in fresh cilantro. Taste and adjust seasoning if needed. Serve immediately.

Notes

Garlic can burn if added too early in some methods; ensure it is diluted by broth. For a dairy-free version, substitute cream cheese with coconut cream. For low-carb, swap beans for cauliflower rice. The chili freezes well for up to 3 months.
