A quick, no-cook breakfast that combines creamy peanut butter, sweet banana, and rolled oats for a comforting and convenient meal prep solution.

  • 1 cup old-fashioned rolled oats
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana, chopped
  • 1 cup milk of choice (dairy, almond, oat, or soy)
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon maple syrup or honey
  • 1/2 teaspoon cinnamon
  • a pinch of salt

Instructions

  1. Prepare two clean 16-ounce mason jars.
  2. Add 1/2 cup of old-fashioned rolled oats, 1/2 teaspoon of cinnamon, and a small pinch of salt to each jar. Shake gently to distribute.
  3. Scoop 1 tablespoon of creamy peanut butter into each jar. Push it down into the oats slightly.
  4. Pour 1/2 cup of milk into each jar. If using chia seeds, add 1/2 tablespoon to each jar now.
  5. Mix thoroughly with a long spoon for about 30 seconds until the mixture is uniform and peanut butter clumps are broken up.
  6. Slice the banana into small rounds and layer them on top of the oat mixture. Reserve half for fresh topping in the morning.
  7. Secure lids tightly and refrigerate for at least 6 hours, preferably overnight.
  8. In the morning, stir in any remaining banana pieces. Add extra milk if too thick, and enjoy cold.

Notes

Do not use steel-cut oats as they will remain crunchy. For best texture, use old-fashioned rolled oats. If the mixture is too thick in the morning, stir in a splash of extra milk. Bananas should be ripe for maximum sweetness. You can toast oats lightly in a dry pan before adding liquid for a nuttier flavor.
