  • 1 cup milk (any kind) (240 ml)
  • 2 tablespoons creamy peanut butter (30 g)
  • 1 ripe banana
  • 1 tablespoon maple syrup or honey (15 ml)
  • 1 tablespoon chia seeds (optional but recommended)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. Mash the banana thoroughly in a mixing bowl until almost liquid with a few tiny lumps.
  2. Add milk, peanut butter, maple syrup, and vanilla extract to the mashed banana. Whisk until peanut butter is fully incorporated (about 1 minute).
  3. Stir in rolled oats and chia seeds until evenly combined. The mixture will be liquidy.
  4. Taste and adjust sweetness or salt as desired.
  5. Divide mixture evenly into two 16-ounce mason jars, leaving about an inch of space at the top.
  6. Optional: Top with banana slices and an extra drizzle of peanut butter.
  7. Seal jars and refrigerate for at least 6 hours, preferably overnight.
  8. Serve cold or at room temperature. If desired, microwave for 45-60 seconds, stirring halfway through. Stir before eating.
