  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. Mash the ripe banana in a jar or small bowl with a fork until mostly smooth.
  2. Add milk, Greek yogurt, maple syrup, and vanilla extract. Whisk or stir until the banana is fully incorporated.
  3. Stir in the peanut butter until mostly combined. If thick, microwave for 10 seconds first.
  4. Add rolled oats, chia seeds, and a pinch of salt. Stir until no dry oats remain.
  5. Seal the jar and refrigerate for at least 6 hours, preferably 8-12 hours.
  6. In the morning, stir the oats. If too thick, add a splash of milk.
  7. Add desired toppings and enjoy cold or microwave for 30-60 seconds for warm oats.

Notes

Mash the banana thoroughly for even sweetness. Use rolled oats, not instant or steel-cut. Let sit at least 6 hours, but 8-12 is ideal. For meal prep, make 3-4 jars at once and keep in fridge up to 4 days. Add toppings just before eating to maintain freshness.
