A rich, velvety overnight oatmeal made with rolled oats, creamy peanut butter, and ripe bananas. This no-cook recipe requires just 5 minutes of prep and results in a pudding-like texture that is satisfying and nutritious.

  • 1 cup unsweetened almond milk (or dairy/oat milk)
  • 2 tablespoons creamy or chunky peanut butter
  • 1 medium ripe banana
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon honey or maple syrup (optional, to taste)
  • 1/2 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Mash the banana thoroughly in the bottom of a mason jar or container until it is a smooth paste with no lumps.
  2. Add the milk, peanut butter, honey (if using), and chia seeds. Stir vigorously until the peanut butter is mostly dissolved and the mixture is creamy.
  3. Add the rolled oats and cinnamon on top. Do not stir yet; let them sit for a moment to absorb liquid from the bottom.
  4. Stir everything together until evenly distributed and thick. Add a splash of milk if too thick, or more oats if too runny.
  5. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, give the oats a final stir. Add a splash of milk if needed for consistency. Top with extra banana slices, peanut butter, or granola before serving.

Notes

Use ripe bananas for natural sweetness and easier mashing. Ensure the banana is mashed completely to avoid chunks. The oats will continue to absorb liquid, so add more milk before eating if the texture is too thick. These oats keep well in the fridge for up to 5 days.
