  • 2 pounds Yukon Gold potatoes, diced into ½-inch cubes
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Brown the sausage: Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the sliced sausage in a single layer and cook for 3-4 minutes per side, until nicely browned. Use a slotted spoon to transfer the sausage to a plate and set aside. Leave about 1 tablespoon of the rendered fat in the pot.
  2. Sauté the aromatics: Reduce the heat to medium. Add the diced onion to the pot and cook for 3-4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for another 30 seconds, just until fragrant.
  3. Add the broth and potatoes: Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the pot. Add the diced potatoes, dried thyme, smoked paprika, black pepper, and salt. Stir to combine.
  4. Simmer the soup: Bring the soup to a boil, then reduce the heat to medium-low. Cover the pot and let it simmer for 12-15 minutes, or until the potatoes are fork-tender.
  5. Add the cream and sausage: Once the potatoes are tender, return the browned sausage to the pot. Pour in the heavy cream and stir gently to combine. Let the soup simmer for another 2-3 minutes, just until heated through. Do not let it boil after adding the cream.
  6. Adjust seasoning and serve: Taste the soup and adjust salt and pepper as needed. Ladle into bowls, garnish with fresh parsley if desired, and serve hot.

For best results, brown the sausage properly to build flavor. Cut potatoes into even ½-inch cubes. Deglaze the pot after sautéing onions to incorporate all the browned bits. Add cream over low heat and avoid boiling to prevent curdling. Let the soup rest for 5 minutes before serving to allow flavors to meld. Leftovers taste even better the next day.
