  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g), pounded to even thickness
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup chopped sun-dried tomatoes packed in oil (drain but reserve some oil)
  • 3 cloves minced fresh garlic
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning or a mix of oregano, basil, and thyme
  • 1 tablespoon fresh chopped parsley for garnish
  • Pinch of red pepper flakes (optional)
  • About 2 cups fresh spinach or baby kale (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, smoked paprika, and garlic powder. Set aside.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
  3. Place chicken breasts in the hot oil and cook undisturbed for about 5 minutes until golden brown. Flip and cook the other side for 4 minutes. Remove chicken and set aside.
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir for 1-2 minutes until fragrant, adding reserved tomato oil if pan is dry.
  5. Pour in 1 cup chicken broth and scrape the bottom of the pan to loosen browned bits. Simmer for 2 minutes to reduce slightly.
  6. Stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Stir gently until cheese melts and sauce thickens, about 3-5 minutes. Avoid boiling hard.
  7. Return chicken breasts to the sauce. Spoon sauce over the top. Cover pan and reduce heat to low. Simmer gently for 8-10 minutes until chicken is cooked through (165ยฐF internal temperature). Stir in spinach or kale during last 2 minutes if using.
  8. Sprinkle with fresh parsley and red pepper flakes if desired. Adjust seasoning with salt and pepper. Serve hot.

Notes

Pat chicken dry for better searing. Use reserved sun-dried tomato oil for extra flavor. Avoid boiling sauce hard to prevent breaking. If sauce thickens too much, add broth or cream to loosen. Let chicken rest off heat for juiciness. Cover pan during simmering to prevent sauce reduction and burning.
