  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup sun-dried tomatoes (packed in oil), roughly chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper, to taste

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  2. Heat butter in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear chicken in batches until golden brown (3-4 minutes per side). Remove chicken and set aside.
  3. Reduce heat to medium. Add diced onion and cook until softened (3-4 minutes). Add garlic, Italian seasoning, and red pepper flakes; stir for 30 seconds until fragrant.
  4. Add sun-dried tomatoes and their oil to the pot; cook for 1 minute. Pour in chicken broth, scraping up browned bits from the bottom.
  5. Return chicken and any juices to the pot. Simmer gently for 10 minutes until chicken is cooked through.
  6. Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and smooth. Do not boil.
  7. Taste and adjust seasoning with salt and pepper. Stir in fresh basil and serve immediately.

Notes

Do not skip searing the chicken for depth of flavor. Keep heat low when adding cream to prevent curdling. If soup is too thick, add more broth; if too thin, simmer longer. Sun-dried tomatoes vary in saltiness, so taste before adding extra salt.
