Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center. Let cream cheese come to room temperature if not already.
  2. Shred the chicken into small, bite-sized pieces using two forks or your fingers. Set aside.
  3. In a medium mixing bowl, beat the softened cream cheese with a hand mixer on medium speed for about 1 minute until smooth and fluffy.
  4. Add the sour cream to the cream cheese and mix until combined. Scrape down the sides of the bowl.

  7. Fold in the shredded chicken, ½ cup of the cheddar cheese, and all of the mozzarella cheese until every piece of chicken is coated. The mixture should be thick and spoonable.
  8. Transfer the mixture to an 8×8-inch baking dish and spread into an even layer.
  9. Sprinkle the remaining ½ cup cheddar cheese evenly over the top.
  10. Bake for 20-25 minutes until hot and bubbly around the edges and the cheese on top is melted and lightly browned. For a deeper golden crust, broil for the last 1-2 minutes, watching closely.
  11. Remove from the oven and let rest for 5 minutes to set.
  12. Garnish with sliced green onions and serve warm with chips, veggies, or bread.
