  • 2 large English cucumbers, thinly sliced
  • 1 cup (240 ml) sour cream (full-fat or light)
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon granulated sugar
  • Β½ teaspoon salt
  • ΒΌ teaspoon freshly ground black pepper
  • 2 stalks green onion, thinly sliced (optional)

Instructions

  1. Rinse and peel the cucumbers if desired. Slice them thinly, about 1/8-inch (3 mm) thickness. For a crisper salad, place the sliced cucumbers in a fine mesh strainer, sprinkle with a pinch of salt, and let drain for 10 minutes. Then gently pat dry with paper towels.
  2. In a small bowl, whisk together sour cream, white vinegar, lemon juice, sugar, salt, and black pepper until smooth. Stir in the finely chopped fresh dill and sliced green onions if using.
  3. Place the cucumbers in a large mixing bowl. Pour the creamy dressing over them and toss gently but thoroughly to coat every slice.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to let flavors meld and cucumbers soften slightly without losing crunch.
  5. Just before serving, give the salad a final gentle stir. Taste and adjust salt or pepper if needed. If the salad seems too thick, add a splash of cold water or milk to loosen the dressing.

Notes

For a crisper salad, drain cucumbers with salt before mixing. Fresh dill is essential for best flavor. Can substitute sour cream with Greek yogurt or dairy-free yogurt for variations. Chill salad for at least 30 minutes before serving. Avoid over-mixing to keep cucumber slices intact.
