A quick and refreshing cucumber salad with a creamy sour cream and dill dressing, made without the traditional salting step for extra crunch. Perfect for summer barbecues and weeknight dinners.

  • 2 large English cucumbers (about 1 pound total)
  • 1 cup (240 ml) sour cream
  • 3 tablespoons fresh dill, finely chopped
  • 2 tablespoons (30 ml) white vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • ½ small red onion, thinly sliced (about ¼ cup)

Instructions

  1. Wash and dry the cucumbers. No need to peel English cucumbers.
  2. Slice the cucumbers into thin rounds, about ⅛-inch thick, using a sharp knife or mandoline.
  3. Prepare the red onion: peel and slice into thin half-moons. If desired, soak in cold water for 10 minutes to mellow the flavor, then drain.
  4. Make the dressing: In a small bowl, whisk together sour cream, white vinegar, sugar, salt, and black pepper until smooth. Taste and adjust salt if needed.
  5. Combine: Place sliced cucumbers and red onion in a large mixing bowl. Pour dressing over the top and add chopped fresh dill. Gently toss until every slice is coated.
  6. Let the salad rest at room temperature for 5 to 10 minutes before serving to allow flavors to meld.
  7. Give a final stir right before serving. Taste and adjust seasoning if needed.

Notes

For best results, use English cucumbers and do not salt them beforehand. Add dill just before serving to maintain freshness. Serve within an hour for optimal crunch. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; stir before serving and add a tablespoon of fresh sour cream if needed.
