Velvety, thick, and incredibly smooth mashed potatoes made in a slow cooker. This set-it-and-forget-it recipe uses simple pantry staples to create a luxurious side dish perfect for holidays and crowds.

Ingredients

Scale
  • 5 pounds Russet potatoes
  • Water (enough to cover potatoes)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup heavy cream
  • 1 cup sour cream
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • Fresh chives (optional, for garnish)

Instructions

  1. Peel the potatoes and rinse under cold water to remove excess starch. Chop into 1.5 to 2-inch chunks.
  2. Transfer chopped potatoes to a 6-quart slow cooker. Add enough water to cover the potatoes by about an inch.
  3. Cover and cook on HIGH for 4 hours or LOW for 6 hours, until potatoes are fork-tender.
  4. Drain potatoes in a colander and let them sit for 2-3 minutes to steam off excess moisture. Optionally, return to the warm (off) crockpot to dry further.
  5. Return potatoes to the crockpot. Add butter, heavy cream, sour cream, garlic powder, onion powder, salt, and pepper.
  6. Mash using a potato masher, ricer, or hand mixer on low speed until smooth. Avoid overmixing to prevent a gluey texture.
  7. Taste and adjust seasoning if needed. Serve immediately, garnished with fresh chives if desired.

Notes

For the smoothest texture, use a ricer. Avoid food processors as they can make potatoes gummy. Ensure potatoes are well-drained to prevent a watery consistency. If using cold butter, soften it slightly for easier incorporation. For a dairy-free version, substitute butter with olive oil, heavy cream with coconut milk, and sour cream with dairy-free yogurt.
