A comforting, easy-to-make slow cooker soup that captures the flavors of traditional lasagna without the hassle. This recipe features tender noodles, savory Italian sausage, and a creamy ricotta finish.

  • 1 pound Italian sausage (sweet or spicy)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 (28-ounce) cans crushed tomatoes (San Marzano recommended)
  • 1 (6-ounce) can tomato paste
  • 3 cups chicken or vegetable broth (low-sodium)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1 (15-ounce) container whole milk ricotta cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 8–10 lasagna noodle sheets, broken into pieces
  • 2 cups fresh or frozen spinach

Instructions

  1. Heat a skillet over medium-high heat and brown the Italian sausage, breaking it up with a spoon. Drain excess grease if necessary, then transfer to the slow cooker.
  2. In the same skillet, sautΓ© the diced onion until translucent. Add the minced garlic and cook for 30 seconds until fragrant. Add this mixture to the slow cooker.
  3. Pour in the crushed tomatoes, tomato paste, broth, oregano, basil, red pepper flakes, salt, and pepper. Stir well in the slow cooker to dissolve the tomato paste.
  4. Break the lasagna noodles into roughly 2-inch pieces and add them to the slow cooker. Stir to submerge the noodles.
  5. Cover and cook on low for 3-4 hours (or high for 2 hours) until noodles are tender.
  6. About 10 minutes before serving, stir in the fresh spinach and let it wilt.
  7. Turn off the heat. Ladle about a cup of hot soup into a separate bowl, whisk in the ricotta cheese until smooth, then pour back into the slow cooker and stir gently.
  8. Serve immediately, topping individual bowls with mozzarella and Parmesan cheese. Cover for a minute to melt the cheese.

Notes

Add ricotta at the very end to prevent curdling. If the soup is too thick, add extra broth. Noodles continue to absorb liquid, so keep the soup slightly soupy. Can be frozen for up to 3 months, though noodles may soften upon thawing.
