  • 1 can (4 oz) diced green chiles

  • 8 oz full-fat cream cheese, cut into 1-inch cubes
  • 2 cups shredded Mexican cheese blend (Monterey Jack and Cheddar)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Optional garnishes: fresh cilantro, sliced jalapeΓ±os, sour cream, lime wedges

Instructions

  1. Place chicken breasts in the bottom of a 6-quart slow cooker.
  2. Pour in chicken broth, salsa, and diced green chiles (including liquid). Stir gently to combine.
  3. Add rinsed black beans, frozen corn, cumin, chili powder, and garlic powder. Do not stir deeply; just distribute spices.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165Β°F and shreds easily.
  5. Remove chicken from pot and shred using two forks or a hand mixer. Discard any fat or skin.
  6. Return shredded chicken to the slow cooker.
  7. Add cubed cream cheese and stir gently until mostly melted and incorporated. Let sit on WARM setting for 10 minutes if needed.
  8. Stir in shredded Mexican cheese blend until melted.
  9. Taste and adjust seasoning with salt, pepper, or heat as desired.
  10. Ladle into bowls and serve with optional garnishes like cilantro, sour cream, and lime.
