Creamy Crockpot Chicken & Rice: Easy 6-Ingredient Dinner

  • 1 cup long-grain white rice
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 to 1.5 cups low-sodium chicken broth
  • 1.5 to 2 lbs boneless, skinless chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Optional: 1 cup frozen peas or corn
  • Optional: 1 cup shredded cheddar cheese

Instructions

  1. Rinse 1 cup of long-grain white rice under cold water in a fine-mesh strainer until the water runs clear to remove excess starch.
  2. Pat chicken thighs dry with paper towels. If large, cut them in half for even cooking.
  3. In a large bowl, whisk together the cream of mushroom soup, chicken broth, garlic powder, onion powder, dried thyme, salt, and pepper until smooth.
  4. Place the rinsed rice into the bottom of a 6-quart slow cooker.
  5. Pour the sauce mixture over the rice and stir gently to combine.
  6. Place the chicken thighs on top of the rice and sauce.
  7. Cover and cook on low for 6-7 hours, or until the rice is tender and the chicken is cooked through.
  8. Remove chicken from the pot and shred it with two forks.
  9. Return shredded chicken to the slow cooker and stir to combine with the rice and sauce.
  10. If adding vegetables like peas or corn, stir them in during the last 30 minutes of cooking.
  11. Let the dish sit for 5-10 minutes to thicken slightly before serving.
  12. Taste and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley if desired.
