A rich, velvety slow cooker soup that transforms fresh broccoli into a smooth base without needing a blender. This easy, dump-and-go recipe delivers restaurant-quality comfort food with sharp cheddar cheese and simple ingredients.

  • 3–4 heads fresh broccoli, cut into florets (stems peeled and diced optional)
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3–4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups freshly grated sharp cheddar cheese
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Pinch of nutmeg
  • Pinch of cayenne pepper (optional)

Instructions

  1. Wash broccoli and cut into uniform florets. Peel and dice stems if using.
  2. Melt butter in a large skillet over medium heat. Add diced onion and cook for 5 minutes until translucent.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Sprinkle flour over the onion and butter mixture. Whisk constantly for 1-2 minutes until light golden to create a roux.
  5. Transfer the sautéed onion mixture to a 6-quart slow cooker. Add broccoli florets and stems.
  6. Pour in chicken broth and stir to combine.
  7. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until broccoli is fork-tender.
  8. Optionally, use an immersion blender to pulse the soup for a smoother texture, leaving some chunks if desired.
  9. Turn slow cooker to HIGH. Stir in heavy cream.
  10. Gradually add shredded cheddar cheese, stirring constantly until melted. Do not boil.
  11. Season with salt, black pepper, nutmeg, and cayenne to taste.
  12. Serve hot, topped with extra cheese, bacon bits, or chives.

Notes

Do not use pre-shredded cheese as anti-caking agents can cause graininess. Always shred cheese from a block. Sautéing the onions and garlic adds significant depth of flavor compared to adding them raw. If the soup is too thick, add more broth; if too thin, cook uncovered or add more roux. Reheat gently on the stovetop to prevent cheese separation.
